Sooo excited. But just wanted to update and also let you know that 30 Days of Breakfast has not been abandoned. I just lost the where abouts of all the pictures for them on my computer and am swimming through thousands of photos to find them.

Egg-tastic Breakfast Sandwich

This morning’s breakfast was inspired by Dark Chef’s Bacon Guacamole Grilled Cheese Sandwich, except it’s the healthier slimmer, vegetarian cousin. But this sandwich is hearty, filling, and very rich and it was exactly what I needed after an intense Insanity workout.

Ingredients

  • 2 Tbsp. homemade guacamole*
  • 2 eggs
  •  2 slices of whole grain bread
  • 1 tomato, sliced
  • 2 medium white button mushroom, raw and sliced
  • 1/4 cup raw spinach
  • 1/2 Tbsp. extra virgin olive oil
  • 1 tsp. Dijon mustard
  • salt and pepper

*Homemade guacamole is as easy as mashing up an avocado, sprinkling in some salt, pepper, and lime to taste and mixing in diced tomatoes and onions. It’s easy. simple, healthy, and delicious!

How-To

  • Make 2 Eggs in a Blanket but without the sriracha
  • slice tomatoes and mushrooms and wash spinach
  • spread mustard onto the bread then add guacamole
  • pile on the veggies and sprinkle feta on top
  • voila!
  • and enjoy your meal : )

So, I always try to style my food to make it look the prettiest it possibly can be-i.e. I wipe crumbs off the plate, position the food exactly how I want it to look, and overall style it to my liking but this sandwich was calling my name when I slopped it together post-photo shoot. So I wanted to give y’all a taste of what the sandwich looks like in its un-styled glory. It’s still beautiful and mouth-watering aye! I can’t wait to tear into this beauty!

Hope y’all enjoy! : )

Day 8 Strawberry Yogurt Bites

Image

Today’s breakfast comes inspired by Tumblr. I saw the cutest little yogurt bites on this fitness tumblr and just had to try them for myself-of course with a little spin on it!

Image

Ingredients

  • 1 3/4 cup homemade greek yogurt*
  • 5-6 fresh strawberries
  • 1/2 cup powder sugar

*I will post up a How-To for greek yogurt soon. Pinky promise!

Image

How-To

  • mix yogurt and powder sugar together in a bowl
  • cut up strawberries into quarters and place one piece per ice cube compartment
  • spoon yogurt over strawberries and let freeze for at least 4-5hours. I suggest doing this the night before and letting it freeze overnight.
  • Wake up the next morning to a yummy breakfast. Yay!
  • and enjoy!

Image

As always, let me know how this goes for y’all!

Peace : )

Day 7 Egg in a Blanket

Image

Kept it simple yesterday, because after a brutal 2 hour workout, my brain (and body) were turned to mush. So i present to you, a fried egg all gussied up!

Ingredients

  • 1 egg
  • 1/4 tsp olive oil
  • 1 slice whole wheat bread
  • salt
  • pepper
  • sriracha (ofcourse!)

Image

How-To

  • first cut-out hole in your bread. using a smaller glass to cut out the hole makes everything easier, plus it gives you a uniform circle).
  • oil and season a saucepan and heat it up
  • toast bread on one side, then when golden brown turn over
  • crack egg into hole and let fry then flip over once more to finish frying the egg on the other side.
  • I personally garnish with sriracha, it’s an Asian hot sauce that I put on everything but anything from ketchup to leaving it plain tastes delicious
  • Enjoy!

Peace : )

The 5 Best Things About This Week

I like to think of myself as a generally optimistic person so to celebrate this beautiful summer weather I wanted to start up this weekly roundup of the amazing people/opportunities/events/things that make me happy. When I was more active with my journaling, I used to write out this list every week, but I like the idea of blogging it better. I can put up pictures ; D! Anyway, here are the best things about my first week of summer.

  1. I GOT A KITTY!!!! His name is Smokey Robinson and all of us in the Yadumu Lair are already hopelessly in love with him.

Image

2.     I made and sold my first dress design! It took nearly 30 hours but it was definitely a labour of love and I am so excited to know that my friend has been strutting her stuff in my dress all around Spain, (she’s studying abroad there this summer-so geeked for her!) If you’re interested in getting a dress of your own or want any item of clothes designed, message me up on the Yadumu FB page or at yadumu@gmail.com.

3. I got the opportunity to assist an amazing local photographer and gained a new mentor. Her name is Ashley Ervin and she has become my #1 resource and connection into the Columbus’ fashion photography world. She started out in the industry as a plus-size model and made the transition to photography a few years ago. Please check out her work here, she’s amazing! Check out some behind the scenes pics. We had such a blast. and the couple she shot were beautiful together.

4.  GIRLS NIGHT IN becomes GIRLS NIGHT OUT! Made some new friends and chilled out at a house party. It was a pretty good night ; )

5. And finally, this last one is really random and silly, but it makes me happy. My business partner now gets 15% off at Michael’s because she’s a teaching intern for Freedom School. Hell yes! We’re in Michael’s all the time because of our jewelry business so this bit of news is epic! …for us at least, haha.

What are some things that made your week the best week ever?

Day 6 Fried Egg Caprese

Image

So… today’s breakfast is coming at y’all a little late because we FINALLY went grocery shopping! I mean we were getting to that desperate point of eating peanut butter and tuna because we didn’t have any food left. If you haven’t noticed, the past few breakfast’s have been sweet dishes, which is not what I usually tend to go for first thing in the morning. I’m more of a savory foods person first thing in the morning because anything too sweet makes me a little queasy. But, i’m excited to finally have more variety to choose from because yesterday’s post of Whole Wheat Waffles literally cleaned out our pantry. It used the last of our butter, eggs, wheat flour, vanilla extract, milk, baking powder, and brown sugar. See, I wasn’t lying, we were at the bare minimum on food. It’s nothing a little trip to the grocery store can’t fix. So in honour of this wonderful day, I decided to play dress up and get a little fancy with breakfast.

Image

Ingredients

  • fresh mozzarella
  • fresh basil
  • 1 beefsteak tomato
  • 1 egg
  • 1 Tbsp. extra virgin olive oil
  • pinch of salt
  • pinch of pepper

Image

How-To

  • slice tomatoes and mozzarella into 1/8″ thick strips
  • layer mozzarella on top of tomato, on top of basil then repeat until you run out of food
  • drizzle olive oil on top then season with the salt and pepper
  • fry an egg in the sauce pan then either layer the egg on top of the caprese or to the side
  • Enjoy!

Image

This combination is so simple and delicious and I especially love my eggs fried over easy so that the runny yolk mixes with the juices of the caprese. Love it! Hope you love it too. Let me know in the comments what y’all think, or if you have any suggestions for what I should make next.

Peace : )

Day 4 I Can’t Believe It’s Not Banana Pudding

Image

Today’s breakfast comes to y’all inspired by my dream last night. The jist of it was lightning bugs, and bbq’s and summer breezes so of course what could go better with this dream than some banana pudding! It’s the classic summer dessert in my family. My Granny makes the best in the bizness! ; D However, banana pudding does not equal clean eats and it’s a little too sweet and rich for first thing in the morning. Sooo, this is breakfasty interpretation of my Granny’s Old Fashioned Banana Pudding.

Enjoy!

Image

Ingredients

  • 1 frozen banana
  • 1/4 cup almonds, ground
  • 1/2 cup granola
  • 1 1/2 cup greek yogurt (homemade of course!)
  • 1/2 Tbsp nutella
  • 1 Tbsp honey
  • 1/4 tsp sea salt
  • 1/4 tsp. paprika
  • 1/4 tsp. vanilla extract

Image

Image

How-To

  • Take frozen banana and slice into pieces and then blend in a food processor
  • Layer banana at the bottom of your cup or bowl
  • Melt Nutella in a microwave for 30 seconds or less. (Anything chocolaty is a little finicky in the microwave so be very careful not to overdo it)
  • Layer nutella on top of banana
  • Sprinkle salt on top of the nutella
  • Sprinkle granola on top of salt
  • Mix the vanilla extract into the yogurt then pile it on!
  • Pour honey over the mix
  • Sprinkle almonds and paprika over top and voila!

Image

Look at those lovely layers! So, I know that I am probably driving health nuts insane with my inclusion of ‘bad’ foods such as nutella and caramel, etc. but my take on it is that everything is good in moderation. And hey- you only live once! (can’t imagine how many of y’all just thought YOLO, lol…). Plus, alot of these unhealthy treats tend to items that I make homemade so they don’t come laden with the chemicals and the iffy mysteries processed food.

Image

So tell me, is this better than yo grandmama’s pudding? I dare you to say no… ; D

Day 3 Super Power Smoothie

Image

This morning, I woke up feeling like Super Woman. So I decided to make a breakfast that emulated that. Behold, the Super Power smoothie. It is jam packed with all the healthy nutritious foods you would need to start your day; so much so that the ingredients lists reads like a listing for an isle in a Whole Foods Mart. So wake up to the breakfast of champions and have a great day!

Image

Ingredients

  • 1/2 small beet
  • 1/2 apple
  • 1/2 cup kale
  • 1/2 a cucumber
  • 1/4 cup oatmeal (cooked or uncooked; your preference)
  • 15 almonds ground up
  • 1 lemon
  • 1 1/2 Tbsp honey
  • 1/2 tsp grated ginger
  • 1/2 cup yogurt

Image

How-To

  • peel skin of beet and dice the beet, the apple, and the cucumber (cucumbers are so underrated in sweet foods but they’ve got this lovely distinctive delicate flavour that makes them great for smoothies)
  • grate ginger and mix into honey (this is just a little trick to get the ginger evenly dispersed throughout the smoothie)
  • place everything in the blender and blend.
  • Voila!

Image

I have to preface what I’m going to say next with this, I absolutely adore beets! However I realize that, that is not the case for most of the population so if you aren’t a big fan of the earthy sweetness of beets then substituent more apple into the beet-apple proportion of your smoothie!

As always, if you try this out at home comment let me know it goes for you!

Peace

Day 2 Apple Pie Oatmeal

Image

Ingredients

  • 1 cup oatmeal (I prefer steel cut)
  • 1 apple diced
  • 1 peach diced
  • 1/2 cup milk
  • 1 tbsp homemade caramel *
  • vanilla extract
  • 1 handful almonds (or as much as you want, it’s a garnish after all)
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt

* I’m starting to realize that since I make homemade almost everything, a lot of these recipes will be recipes within recipes. In this case, until I can make a post about it, here’s an amazing recipe for Homemade caramel. It’s so bad for you but it tastes so good so that’s why we use it sparingly in this recipe.

How-To

  • Follow directions on your oatmeal container to get the best results, but don’t forget to salt the water before putting the oatmeal in. The salt only acts as a compliment to the sweet flavours we’ll be adding later For example, I use whole grain steel cut oats which take a little longer to cook because the grain is a little coarser so it takes about 30 minutes of simmering to get my oats to the consistency I like.
  • In a separate sauce pan mix 1/2 cup milk, the diced apple bits, vanilla extract, and spices. Set heat on medium-high and let boil. Put a lid on the saucepan to cook down apples for 3-5 minutes. It all depends on how soft or chewy you want your apples.
  • Turn heat off saucepan and stir in peaches.
  • Crush almonds by placing them in a zip lock baggy and finding the heaviest object to smash the bag with. Voila! Instant crushed almonds and stressor reliever all-in-one.
  • Take oatmeal off heat and plate it.
  • Spoon apple peach mixture on top.
  • Garnish with a sprinkling (or a heaping handful in my case. I love almonds too much!) of almonds.
  • And enjoy!

Enjoy! And let me know how this recipe goes for you if you try it out.

Peace : )
